Golden Coconut Curry

A creamy, warming full bodied tasting curry that is perfect for satisfying those of you in search of the perfect bowl of comfort food……...but the best thing about this meal is that it is full of our Golden Gut antioxidant spice blend, a good source of vitamins, minerals and healthy fats!

Cooking time 45 minutes

Serves 4

 

Ingredients

1 Tbsp of coconut oil

3-4 tsp of Golden Gut Turmeric Spice Blend (GGTSB)

1 red onion

Half a cup of snow peas or brussel sprouts

1 red capscicum

2 carrots

Half a large sweet potato or a quarter of pumpkin

1.5 to 2 cans of coconut cream

2 cups of quinoa or brown rice

Pink Himalayan salt

500 grams of chicken breast or thigh fillet

 

Utensils

Sharp knife

2 Chopping boards

1 tablespoon and 1 teaspoon

1 wooden spoon

1 medium size saucepan

1 large deep fry pan or a wok works fine

Method

1. Using a spumpharp knife and one of the chopping boards, thinly slice your chicken into small strips and set aside ready to be cooked at a later stage.

2. Using the second chopping board, slice and dice the red onion, snow peas/brussel sprouts, capsicum, carrots and sweet potato/kin then set aside ready to be cooked at a later stage.

3. Rinse quinoa/brown rice then cook in a medium size saucepan in water according to packet instructions.

4. Whilst the quinoa/brown rice is cooking, in a large deep fry pan heat on a medium temperature heat 1 Tbsp of coconut oil and 3-4 tsp of GGTSB until you can start to smell the spice aromas, add red onion and cook until it starts to brown. Then add coconut cream, stir until well combined with spice mix and onion and allow to simmer for 2-3 minutes. At this stage you should have a golden creamy coconut curry base bubbling away in your pan.

5. Now add your raw sliced chicken to the coconut curry base, stir through with a wooden spoon, then put a lid on the pan and let simmer, allowing the chicken to cook through in the coconut curry base (approx. 10 mins).

6. Remove the lid on the pan, add the snow peas/brussel sprouts, capsicum, carrots and sweet potato/pumpkin and stir into the mixture. At this stage add pink Himalayan salt to taste.Replace the lid on the pan and allow to simmer for a further 10 minutes or until the veggies are cooked through.

7. Once both chicken and veggies are cooked through, give the curry a quick stir and serve in a bowl over the cooked quinoa/brown rice. Enjoy!

Nourishing Golden Eggs

Eggs…..what a superfood! They are an inexpensive high quality complete protein. Serves 1

 

Ingredients

2 organic free range eggs

2 - 3 cups of filtered water

2 tsp of apple cider vinegar

1 cup of baby spinach or mixed leafy greens

1 tsp of Golden Gut Turmeric Spice Blend (GGTSB)

1 tsp of Nutritional Yeast

¼ tsp of pink Himalayan rock salt

Utensils

1 small saucepan

1 slotted spoon

1 measuring tsp

1 measuring cup

 

Method

1. Add 2 - 3 cups of filtered water and 1tsp of GGTSB and ¼ tsp of pink Himalayan rock salt to a small saucepan, heat and bring to a very gentle simmer. Add apple cider vinegar at this point.

2. Turn the heat back to a low simmer (where the water is steaming but no bubbles are being produced) then crack one egg into a small shallow ramekin and gently pour (slide) the egg into the steaming water. Cook for 2-3 minutes for a soft yolk and 4-6 for a hard yolk finish. Remove egg with a slotted spoon and place on a bed of baby spinach or mixed leafy greens. Repeat this step for the second egg.

3. Finish by garnishing with freshly cracked black pepper, extra salt (if required) and nutritional yeast.

Serves 2

 

Ingredients

1 cup of steel-cut rolled oats

1 cup of water

1 cup of milk or milk alternative

1 Tbsp of chia seeds (black or white)

2 tsp of rice malt syrup or raw local honey

1 tsp of Golden Gut Turmeric Spice Blend (GGTSB)

Toppings for your bowl: banana, pepitas, sunflower seeds, coconut cream, coconut flakes, honey and almonds

Utensils

1 medium saucepan

1 wooden spoon

Assorted measuring cups and spoons

 

Method

1. Place all ingredients (except for your bowl toppings) into a saucepan. Bring to the simmer and allow oats to absorb liquid. Stir regularly. The oats are ready when the mixture becomes thick, creamy and golden.

 

2. Top with your favourite toppers -see ingredient list above for ideas, however, the options are endless!
